The Mocambo fruit plant, scientifically known as Theobroma bicolor, is a close relative of the cacao tree (Theobroma cacao), the source of chocolate. Also known by other common names such as “white cacao,” “jaguar tree,” or “pataxte,” this evergreen tree is native to the tropical rainforests of Central and South America, particularly in the Amazonian regions. The tree can reach heights of 3 to 8 meters in cultivation but can grow up to 30 meters tall in the wild forest understory. It is distinguished by its large, veined, dark green leaves and its oblong, woody fruit pods that are yellowish-green and bumpy.

Unlike its cacao cousin, the Mocambo fruit pod is notably sturdy, which allows it to fall from the tree without significant damage when ripe. Inside the thick shell, the fruit contains a large quantity of soft, white pulp that surrounds the seeds. The pulp is edible and has a sweet, mild flavor often described as a mix of melon and pineapple. The seeds, or beans, are also edible and have a nutty, almond-like flavor. They are used in various culinary applications, including being roasted and eaten as a snack, added to soups, or ground to make a paste for a traditional, nutty-flavored beverage. Historically, it was cultivated by ancient Mesoamerican cultures alongside cacao, and its seeds are a rich source of protein, fiber, and healthy fats.
